Château Paradis, Coteaux d’Aix en Provence Terre Des Anges, The premium range of the vineyard, Terre des Anges is the product of a meticulous selection of the grapes from our most beautiful parcels of Pardis.

Producer Profile

The vines of Château Paradis date from -600 JC. Thiéblin family owns the property from 2011. a year after purchasing  Château Paradis, they decided to reorganize the vineyard and acquired further fifty hectares of additional vines in PDO, initially belonging to the Château de Fonscolombe.

The appellation Coteaux d’Aix-en-Provence is one of the three western Provence appellations. The characteristics of the  of Aix-en-Provence, the slopes mountains are excellent to produce high quality rose wine with an annual sunshine exposure of 2,900 hours and a Mediterranean climate influenced by the Mistral, creating the perfect condition fro the grapes to ripe and developing balanced level of sugar, acidity and pH.

WINEMAKING PROCESS

The grapes are carefully handpicked to avid and damaged to grapes and unwanted starting of the fermentation.  The grapes are sorted in the vineyard and then again upon arrival at the winery. The bunches of grapes are cooled before pressing  this process help to preserve aromas and colour. This wine is made of Syrah and Vermentino grapes varieties.

This grapes are harvested when they have reached optimum maturity. both grapes varieties were blended in the press machine. Only the free run juice was kept for alcoholic fermentation. The third grape variety Mourvèdre, which matured later, was fermented in 600 litres and 15 hectolitres oak casks, and subsequently aged for two months on fine lees.

This particularity process for a rosé wine is incorporated to add complexity and uniqueness to the final blend. The Terre des Anges rosé is a rich and elegant wine. This is wines has achieved a score of 91 points out of 100, making it the highest score for a Rosé from Provence.
