The vineyard is located 20km west of  Narbonne, on the northern hills of the Fontfroide. The soils are sandy and slightly acidic and the estate is organically farmed.

The mindset of the family own estate is to be  respectful of the soil, the plant and its environment. The certification in Organic

The soils are grassed and ploughed, no weed killers are used, nor chemical fertilizers. Yields are limited and controlled by short pruning, disbudding and green harvesting. All of these actions encourage the roots of the vines to obtain in depth nutrients and minerals, thus allowing the wines to gain depth and complexity. No synthetic product, chemical fertilizer is used in the vineyards.

Only organic products are used like sulphur and copper. The grapes are harvested at maturity, with very low yields offering great concentration.

This wine comes from the Viognier grape variety and is produced in Aude. The harvest is manual and the wine making process used is the traditional method with cold settling and fermentation at 17 ° C.

The grapes are carefully selected, first selection is carried out in the to ensure only the healthiest grapes arrives in winery. and undergo a gentle destemming, The wine is then fermented in a stainless steel tanks under controlled temperature.
