Iona, Sauvignon Blanc, Elgin Highlands, South Africa is beautifully wine,  the conditions to make this quality wine was set when the vineyard were planted.  the Sauvignon Blanc plot is located 420m above sea-level, overlooking the charming Elgin Valley. This winery was founded by Andrew Gunn. the vineyards has a fantastic views over the Atlantic ocean, Andrew has secured one of the coolest  piece of land for his vineyards in the Cape.

In south Africa it’s very rare to buy a vineyard In a cool climate region Andrew was lucky enough to put his hand on this parcel of land. the soils are formed by gravel bed, Sandstone and silica soils quartz  with underlying clay. The long growing season, allows the grapes to ripe to perfection,  with carefully maintenance of the vineyards and a passion to make quality wines Andrew creates wines with complex flavours and a fresh, elegant style. The quality of the wine is paramount, however so is looking after our planet. Organic and biodynamic practices are applied throughout the vineyard, with a particular focus on ensuring the soils are the health. Pests are kept under control naturally by letting a flock of geese to roam the vineyards.

Viticulture

The Sauvignon Blanc vines were planted between 1997 and 2012. Due to the cool climate, the vines benefit from long, slow physiological ripening making it the ideal growing conditions for good quality wines, the grapes develop the right balance of sugar, ph, acids, tannins and flavour compounds to produce elegant, low alcohol wines of distinction. The harvested takes place around in March.

Winemaking

The grapes are carefully selected, the whole bunch pressed and each parcel fermented separately. The must is left to settled for 8 to12 hours and then it is racked to 500L French oak barrels to enhance the wine weight and to add extra complexity to the wine.. The wine was kept on the gross lees for five months and stirred regularly to enhance the richness. The wine then has a further three months maturation in tank after blending, before it is finally bottled.

Tasting Note

The wine is smooth with concentrated fruit flavours and citrus notes, followed by hazelnut and lime notes, adding a luscious layers of complexity. The wine is elegant  and  well structured with a  long finish.

This wine is good on its own but certainly perfect match for Chicken, fish dishes and cream sauce dishes, salads and mild cheeses.
