Biscardo Neropasso Originale, Veneto Rosso is intense ruby red, turning to garnet with ageing. Bouquet is spicy with hints of cherry, black cherry and plum compote. Fine and velvety palate, persistent, with soft tannins at the end. Dangerously drinkable, this wine will beckon you back to the glass for a gulp again and again. This wine is produced using the passimento method, famous for being used in the production of Amarone, whereby the grapes are dried prior to pressing which concentrates the flavour and results in an incredibly rich and intense wine. Producer Profile The Biscardo Family a have been involved the wine making for over a century . The family mindset is to utilise only the best winemaking techniques in every single wine they make. to ensure the natural quality of the grapes are preserved. aim t all time to make and consistently great quality wines year after year. Viticulture The vineyard soils are brown and red on silts, loam rocks formed from the Cretaceous period. Winemaking The grapes are hand picking and carefully selected at the time of the harvest to ensure only the thinnest bunches of grapes are selected. The bunches grapes are spaced The grapes are laid out in large perforated plastic boxes to ensure the air can circulate and all grapes get an excellent ventilation. The boxes are stacked in a large airy room and at regular intervals the grapes are monitored to make sure the Appassimento process takes place. Preserving the characteristics of the grapes and soil are paramount. The fermentation process is carefully monitored to ensure it completes smoothly and the wine develops all desired aromas and flavours, and simultaneously applying environmentally friendly methods.
