Description
Le Grand Saut, La Voûte du Verdus, AOP Languedoc is simply a super wine. This domaine La Voûte du Verdus was founded in 2011 by oenologists Mélanie and Pierre Estival.
The Domaine is situated in Languedoc region, in the heart of St Guilhem le Désert village, where the imposing Cistercian abbey are found. the village is described as one of the most beautiful villages in France. St Guilhem le Désert is on the famous routes of Santiago de Compostella.
Currently the domaine has 8 hectares with several grapes varieties, amongt there are: Syrah, Grenache Noir et Blanc, Colombard, Vermentino, Cinsault, Carignan Noir and Blanc.
In 2005 1 hectare of Mourvèdre was planted, although this is a difficult grape variety to handle but it make extraordinary wines. In 2010 we wanted to develop a fresh and dynamic wine so we selected Colombard as our go to grape variety. And in 2018 a beautiful plot of Carignan Noir was replanted in order to develop our Star wine Le Grand Saut.
The estate takes its name from the stream crossing the village: Le Verdus. The cellar is built on the stone vault spanning the Le Verdus stream, which naturally cools down the winery throughout the year.
Le Grand Saut, La Voûte du Verdus, AOP Languedoc wine is a blend of Carignan and Mourvèdre with a touch of Grenache and Syrah. This wine predominantly Carignan as this grape variety is best suited to the region climate and our terroir. Our knowledge and experience of the grape variety, climate and soil allows us to make a fantastic wine, well structured and harmonious, with great potential for aging.
The grapes are handpicked and carefully selected to ensure only quality grapes are used in the wine making process.
The grapes are destemmed and kept in a temperature controlled stainless steel tanks. The fermentation stage takes from 3 to 4 weeks. Then the wine undergo an aging process for 12 months in French oak barrels.
Result is a deep red wine, complex with spicy and leather aromas in the nose, soft and silky tannins and a long aftertaste with a beautiful freshness and velvety notes.
This superb wine, is perfect match for steaks, roasted vegetables, lamb and hard cheeses.
